Fixed, detachable or retractable?
They all tow the same weight. The difference is how much of the bar you can see when you're not towing, and what else you can hang off it.
Fixed flange towbar
The workhorse. Bolt-on ball with a flat flange, so it takes cycle carriers and stabilisers. Always visible.
Swan neck towbar
Neater curved neck with a slimmer profile. Tidier look, but fewer accessories bolt to it than a flange.
Detachable towbar
Comes off when you're not towing, so the back of the car looks standard. Dearer, but no permanent ball on show.
Retractable towbar
Tucks away under the bumper and swings out when needed. The tidiest option and the most expensive.

Dedicated or bypass?
